Who has left over Easter eggs? I don’t anymore, because we had some delicious egg salad this week! Dave likes his food with a little kick to it, so I switched it up a bit and used some southwest spicy mustard. It turned out great!
Ingredient list:
hard boiled eggs, cut fine
mayo
mustard
southwest spicy mustard (or not, if you don’t like spicy, use all regular mustard)
parmesan cheese
salt & pepper
* I also usually put in a spoonful of pickle relish, but was out when I made this batch…
(Since egg salad pretty much depends on your taste, just sample it as you go along and add more of what you want) In this case, I used mayo, mustard, and spicy mustard equally but generally you want a 2 to 1 mustard to mayo ratio. Then sprinkle in parmesan, salt and pepper. Easy!! I love easy recipes!

I now need to go boil more eggs as this post just made me completely starving!

YUM!! I've never had Parm. cheesee in egg salad! I'll have to try that!!
