Chicken Quesadilla

This is pretty easy and even my picky eaters eat! I’ve learned to post my recipes on the night we’re eating said item, or I get too hungry and must have it. This recipe was created from a combo of several over at TidyMoms. I’m not sure if it’s an official quesadilla any more, because I just make one huge one and cut slices off of it. Anyway, who cares what it’s called, it needs to be in my tummy soon.

I make 2 versions at once, one for the kids (the picky ones) and one for me. Um, us.

Ingredients:
biscuits
refrigerated pizza dough from your friendly neighborhood grocery section
Mexican shredded cheese blend
cream cheese – just a couple of slices over the top
ranch dressing
pizza or spaghetti sauce
chicken (pre cooked and cut up)
and anything else you enjoy
My husband likes hot salsa, onions, olives, a whole slew of things I don’t want accidentally invading my side of the quesadilla, so I put those in little cups on the side and he adds them later or just dips into the salsa.

For the kids:
I’ll flatten a biscuit, add the sauce, cheese, add another flattened biscuit on top and press the edges together. I’m pretty sure it’s the edge pressing that makes it a quesadilla instead of a pizza pocket.
Bake according to the directions on the biscuits.

For the adults: I unroll the pizza dough and flatten it as much as possible. Add the sauce, chicken and other ingredients to one side. Fold other side of dough over your masterpiece and once again make those little divots around the edges using your fingers or a fork.
Preheat oven to 400 bake 18-20 minutes
Try to let it cool a bit before scarfing it, as too soon will burn your mouth!

Kids quesadillas

Chicken quesadilla. It doesn’t win points for looking fancy, but wait until you cut slices off!

  3. Looks yummy! I make two or three versions of most of our meals also. More to accomodate food allergies than pickiness. If they don't like it, eat cereal. Or go hungry. Their choice. I added my email address under my bio picture. Sorry.
