My husband thinks egg casserole is about the best thing since…. well…. I’m trying to think of something really neat yet geeky… One of those fancy do it all calculator things? I don’t know, but this recipe is good and the best part is that there are so many ways to make egg casseroles. They’re just delicious and can we say protein? Healthy shouldn’t taste this good!
Ingredients
- 1 pound pork sausage
- 6 eggs
- 2 cups milk
- 1 teaspoon salt
- 1 teaspoon ground mustard
- 6 slices white bread, cut into 1/2-inch cubes
- 1 cup shredded Cheddar cheese
In a skillet, brown and crumble sausage; drain and set aside. In a large bowl, beat eggs; add milk, salt and mustard. Stir in bread cubes, cheese and sausage. Pour into a greased baking dish. Bake, uncovered, at 350 degrees F for 45 minutes.
You can also cover and refrigerate overnight and throw it in the oven in the morning! Awesome for company!
This is the best way to use up bread that’s starting to get a little stale!

It’s quite funny how I’m such a big egg lover yet I’ve never tried an egg casserole! I might try making, only I’ll have to go sans pork since I don’t like… Will it still be called casserole? lol

You don’t have to use pork! When I make it, I only put meat on 1/2 because I have 2 picky eaters. There are some awesome cheesy egg casseroles I’m going to post soon too.
